Lemon rice is very easy tastiest recipe in South India which
can be prepared in 10mts. We can eat this recipe with combination of yogurt,
Raita. Let us see how to prepare lemon rice.
INGREDIENTS:
- RICE: 2 CUPS
- LEMON: LEMON JUICE OF 3 LEMONS
- SALT: AS MUCH NEEDED
- MUSTARD SEEDS: 2 TBSP
- CASHEW: AS MUCH NEEDED
- PEANUTS: 2 TBSP
- CURRY LEAVES: FEW
- TURMERIC: 1 TBSP
- OIL: 3 TBSP
- HING OR ASAFOETIDA: 1/2 TBSP
- ZINGER: AS MUCH NEEDED
- GREEN CHILIES: 2
PREPARATION:

· First
cook 2 cups of rice .Serve the rice in separate vessel and let it cool down for
few minutes.
· Take
a separate pan with 3 table spoon of oil.
· Heat
the oil for 2 minutes and add peanuts, cashew nuts mustard seeds to it. Roast
the seeds for few minutes.
· Add
chopped green chilies, chopped zinger pieces and curry leaves to the same oil
and let it fry for few minutes.
Add sufficient turmeric powder and half tbspn asafetida
to that content.
· Add
the lemon juice and turn off the burner.
· Finally
add sufficient salt to it
.
· Add
the roasted content to the rice and mix it thoroughly.
· Now
serve the lemon rice in a separate bowl and garnish it with coriander leaves.
