Gutti
vankaya curry is very famous Andhra special Dish. It can be served as main course for rice item
and it is good combination to eat with rotis as well as chapathis. Let us see
how to make this delicious Egg plant stuffed gravy in a very simple manner.
INGREDIENTS:
Red mirchi:
Few as much needed for spicy taste
Coriander
Seeds: 1tbspn
Cumin seeds:
1tbspn
Ground nuts:
one full cup
Sesame
seeds: 3 or 4 tbspn
Dry coconut
pieces: few
Tamarind:
small piece (optional)
Oil: as much
needed
Salt: as
much needed
Egg plants
or Brinjal: as many as we want
PREPARATION:
First cut
the egg plants or brinjal from 4 sides but not completely and let them soak in
water for 10 minutes.
Take a pan
with 2 tablespoon of oil and heat for 2mts.
Now take few
dry mirchi, coriander seeds, sesame seeds, cup of ground nuts, dry coconut
pieces, and cumin seeds into that pan where oil is already heat.
Roast all
the items in the oil for few minutes in a low flame until they turn to golden
color.
Let the
roasted seeds get cool for few minutes. Now take the roasted items in a mixer
grinder and grind it well like a powder. Keep the powder aside.
Next take all
the egg plants that are soaked in water and fill the powder (powder that is wet
paste or dry powder) into all brinjal pieces wisely and keep it aside.
Now take a
separate pan with half cup of oil and let it heat for few minutes.
Now take all
the brinjals that are filled with powder and add to the pan where oil is
already heat and close the pan with a plate.
Let all the
brinjals cook well in the oil in a low flame burn until they turn to smooth and
soft. Once all brinjals are cooked well add some more powder for extra
garnishing.
Take the
tasty smooth brinjal stuff and serve in a bowl.
Now you can
taste this tasty recipe with combo of rice or chapathi.
